Leucine
An amino acid classified as nonpolar.
Histidine
An amino acid classified as basic.
Phenylalanine
An amino acid classified as nonpolar.
Serine
An amino acid classified as polar neutral.
N-terminal
The end of a polypeptide chain that has a free amino group.
C-terminal
The end of a polypeptide chain that has a free carboxyl group.
Asparagine
A polar amino acid that is more likely to be found on the exterior of a protein.
Isoleucine
A nonpolar amino acid that is more likely to be found on the interior of a protein.
Glutamate
An acidic amino acid that is more likely to be found on the exterior of a protein.
Secondary structure
Part of a protein where the backbone exhibits a coiled structure due to hydrogen bonding.
Tertiary structure
The overall three-dimensional shape of a protein, including the folding of polar and nonpolar amino acids.
Collagen
A fibrous protein that is a component of bones, cartilage, tendons, and ligaments.
Structural protein
The functional class of proteins to which collagen belongs.
Trypsin
A protease that cleaves on the C-terminal side of lysine and arginine in proteins.
Met-Gly-Phe Gly Arg Ala-Tyr-Met-Ser-Asp-His-Lys
A peptide chain that produces fragments after being treated with trypsin.
