Water as a solvent
Helps multicellular organisms transport molecules around the body

Cohesion-Tension Hypothesis
Transpiration (evaporation) occurs because stomata are open to allow gas exchange for photosynthesis. As it occurs, negative pressure is created (tension/suction)
Tension pulls water in the plant xylem drawing water upwards.
Cohesion pulls up water molecules in chains as the top-most water is pulled up and out of the stomata.

A property of the surface of a liquid that allows it to resist an external force due to the molecules cohesive nature.
