What is oxidation?
When metals react with oxygen and oxygen is gained in the reaction

The process of extracting a metal from its oxide involves the loss of oxygen

How does reduction by carbon work?
Carbon is more reactive than metals below it, so it will remove oxygen from the metal and form carbon dioxide

Because metals are more reactive than carbon will not be reduced by it, so electrolysis is used instead
