What is leavening?
Leavening is the production or incorporation of gases in a baked product to increase volume and produce shape
and texture
What do chemical leaveners do?
They release gases produced by chemical reactions. Example: baking soda
What does baking soda do?
It releases carbon dioxide gas.
What is baking powder?
It is a mixture of baking soda plus one or more acids to react with it. They contain starch which prevents lumping
What does baking soda release?
Bicarbonate of soda releases carbon dioxide co2 gases
What are the two types of baking powders
Single acting
Double acting
How is single acting baking powder activated?
• Is activated with presence of moisture
• Products using this must be baked immediately
• No longer commercially available, although you can make one yourself
What is double acting baking powder?
It is a chemical leavening agent used in baking that releases carbon dioxide gas in two stages to help baked goods rise
What is baking ammonia?
The mixture of ammonium carbonate ammonium bicarbonate and ammonium carbomate
Where should you store the chemical leavening agents
Store in a dry cool place and cover tightly
What is the standard for muffins?
The standard is 60-75 grams (2oz.) and ¾ full
