Amylose (starch)

• Made of alpha glucose monomers - insoluble so doesn’t affect water potential of cell

• Joined by alpha 1-4 glycosidic bonds- stores glucose in plants

• Unbranched- compact so can be stored inside cells

• Forms a coiled molecule

Amylopectin (starch)

• Made of alpha glucose monomers- store of glucose in plants

• Joined by alpha 1-4 and alpha 1-6 bonds- greater store of glucose per volume.

• Branched molecule- more terminal ends increases rate of hydrolysis & rate of supply of glucose for respiration

Glycogen

• Made of alpha glucose monomers- store of glucose in animals

• Joined by alpha 1-4 & alpha 1-6 bonds- greater storage of glucose per volume.

• Heavily branched molecule- more terminal ends increases rate of hydrolysis, & rate of supply of glucose for respiration
