What is the optimum pH of most human enzymes and what is an exception ?
Most have optimum of pH 7
Pepsin has an optimum of 2 , which is useful as it is found in the stomach where it is acidic
How does an enzyme become denatured ?
Above and below the optimum pH, the H+ (acid) , and OH- (alkali) ions can change the ionic and hydrogen bonds that hold the enzymes tertiary structure in place . This makes the shape of the active site change , so the enzyme denatures .
What does optimum pH value mean ?
Specific value at which a biological process like enzyme activity functions most efficiently
What does denature mean ?
A change in the tertiary structure means the active site changes shape , so an enzyme can no longer fit and a reaction can’t happen
