What are the conditions for the growth of moulds
Food; saprophytic, e.g on dead organic material e.g bread and cheese - cause food spoilage
Temperature; mesophiles (20-45 degrees). Freezing inactivates moulds. Temps above 75 destroy them
Moisture; essential for growth
Oxygen; aerobic (need oxygen), they will grow on the surface of foods e.g jam
pH level; most like slightly acidic environments (4-6)
Time; moulds need time to multiply (24-48 hours)
