Taste (Gustation)
Sensations produced when substances dissolved in saliva penetrate taste buds.
Flavor
Combination of taste, smell, temperature, texture, and consistency.
Umami
A meaty, brothy, savory taste (5th basic taste).
Papillae
Small bumps on the tongue that may contain taste buds.
Taste Buds
Structures on the tongue, throat, roof of mouth, and cheeks, containing taste receptor cells.
Microvilli
Small threads at the end of receptor cells that jut into a saliva-filled pore in the taste bud.
Tasters
People who can taste PTC or PROP.
Nontasters
People who cannot taste PTC or PROP.
Supertasters
People who find PTC or PROP extremely bitter; have more taste buds.
Primary Taste Cortex
Located in the insular cortex; identifies and judges the intensity of tastes.
Orbitofrontal Cortex
Combines taste with other senses (smell, vision, touch) to create the pleasure of food.
Bimodal Neurons
Neurons in the orbitofrontal cortex that respond to two different senses (e.g., taste and smell).
Gustation
Technical name for Taste.
