MT65 sampling items
Bench trim
MT60 sampling items
Slaughter est beef manufactured trimmings intended for non intact use
What type of items fall under MT43 sampling
Ground beef, any location or source
MT64 ampling items
Other raw ground beef components
Cheek, head, weasand, heart, AMR, LTRFTB and ammoniated products
Est produces nonintact product, itâs transferred to another federal est for lethality, is it eligible for MT43 sampling? Should it be reflected in the HACCP?
No
Yes, verify the estâs hazard analysis and flow chart show product is intended for a controlled use AND est has controls to ensure the product is used as intended
Est doesnât maintain clear records concerning end use of a product as intact or nonintact or if lethality is involved. Could IPP still collect a sample?
Yes, IPP assume products are intended for use in production of raw nonintact product
Product is subject to being sampled, est performs a lethality treatment, can IPP still sample?
Yes, IPP sample the product even if the est decides to change the intended use
How is sampling frequency determined? What components make up the frequency formula?
Max number of sampling tasks is based on est production volume (average daily volume in lbs per day)
What are some factors to consider when deciding what is a lot?
Scientific sampling programs for STEC the est uses to distinguish segments of production
Ssops/other prereq programs used to ctrl STEC spread/cross contamination btwn components during production
Processimg interventions limit/ctrl STEC contamination
Trim and components/rework carried from one production period to another
How much notice is required to est personnel before gathering samples?
Roughly 1-2 daysâ notice, sufficient for the est to hold the sampled lot
Basic procedure for collecting an MT60/65 sample
Wash and dry to mid forearm
Open bag and invert to drop sterile cloth onto sample product
Place the open bag in an upright position on a clean, sanitary surface
Put on sleeves and gloves, (spray) sanitize both on arms
Unfold cloth, apply downward pressure and massage cloth along surface area of product (1.5 minutes per bin, 45-60 seconds per cloth side)
Refold cloth, place into original bag
Open and asceptically pour nBPW tube into the same bag
Gentle pressure to soak cloth in nBPW
Remove excess air and pack
Basic procedure for collecting an MT43 sample
Final packaging available, collect number of packages to equal 2lbs
Grab procedure for collecting an MT43 grab sample
Wash and dry hands
Open bag, place bag upright
Put on and sterilize gloves
Collect grab sample, enough to fill the 3 roll top bags to the fill line
Remove excess air from each bag - DO NOT tie the ends
