Endopeptidase

This is a class of enzymes that breaks peptide bonds inside a protein, releasing shorter polypeptides

Exopeptidase

This is a class of enzymes that cleaves near the termini of a protein, releasing amino acids, dipeptides, and tripeptides

Pepsin

This cleaves between residues in the presence of an aromatic side chain

Trypsin

This cleaves between residues in the presence of a positively charged side chain

Chymotrypsin 

This cleaves between residues in the presence of an aromatic side chain 

Zymogen

This is the pro- form of a protease that undergoes activation as needed

Carbon skeleton

This encompasses that carboxylic acid group, the side chain, and the α-C

Deamination

This is the process of cleaving the carbon skeleton from the amine group

Aminotransferase

This is an enzyme that moves an amine group to a different molecule, transforming an amino acid into a keto acid
