cortado: 1:1 ratio of double espresso and steamed milk
flat white: 8 oz drink with more wet consistency for foam
cappuccino: 8 oz drink with more foam than flat white
latte: 10 oz double espresso drink that has a wet foam

Chiapas, Mexico. Flavor profile consists of chocolate, walnut, and citrus. Taste should be sweet, medium-bodied, and has a clean finish.
About how many seconds should a good espresso shot be (give a range) and how many grams should it typically grind out to?
25-30 second shots. Ideally 26-29 seconds each time. 18.4g of espresso grinds should be dispensed.

What is a kouign amann and kanelbullar?
Kouign Amann is a layered brioche pastry with sugar slightly caramelized on top.
Kanelbullar is a sweet swedish pretzel that consists of sugar on top with cinnamon and cardamom inside.
What should you ask when a customer orders an espresso or cortado?
Would you like that for here (4H) or to go (Hottogo)?
What should you say when a customer orders a macchiato?
Our macchiatos come traditional, so it’ll be a double shot of espresso with the tiniest bit of foam. Usually in a 4oz cup.
What company is our matcha from and what grade is it considered?
Our matcha comes from Sante company. Origin from Uji, Japan. Taste profile of
smooth/creamy & soft sweet finish. Ceremonial grade.
About how many milligrams of caffeine are in: an espresso shot, a 10oz drip coffee, cold brew, matcha latte?
Espresso: ~130mg
10oz drip: ~150-180mg
Cold brew: ~200mg
Matcha latte: ~70mg
What is a chagaccino? Does it have sugar? What does it taste like?
A chagaccino is a mushroom blend that includes chaga powder, cinnamon, cocoa powder, vanilla, and monk fruit sweetener. It uses an alternative sweetener, so it tastes sweet with 0g sugar. It tastes like an earthy mocha.

What is the difference between the house cold brew and the kyoto cold brew?
Our house cold brew is a medium-light roast and our kyoto cold brew is made from a lighter roast. House cb has more of a chocolatey nutty flavor profile while kyoto is more fruity and brighter in taste.

What to inform customers when they want their coffee beans grinded for espresso?
Typically we would not recommend grinding for espresso because they would not be able to “dial in” and adjust their shots. If they insist, we will grind it at the 2.5 setting.
What is houjicha?
Houjicha is a roasted matcha that tastes almost nutty and earthy. It has a velvety finish and because it is roasted, the roasting process takes away the grassy and vegetal taste of matcha that some people dislike.
What is chicory?
Chicory is a spiced root that we use to infuse into our cold brew to give the coffee a more nutty and bolder flavor.
