The capital of Thailand, with a population of approximately 9 million in the metropolitan area.
Thai
The primary language spoken in Thailand, also known as Siamese.
Baht
The currency used in Thailand.
Constitutional Monarchy
The form of government in Thailand.
Ayutthaya
A former capital of Thailand that was involved in wars with Burma and eventually destroyed by the Burmese army in 1767.
King Narai
A Thai king who reigned from 1662-1687, during whose reign the French appeared on the scene of Thai history.
King Ram IV
A Thai king who began a new era of diplomacy, establishing treaties with most of the World Powers from 1855-1868.
Tom Yum Goong Soup
A hot & sour prawn soup.
Tom Kha Gai
A Chicken & Coconut Milk Soup.
Ghee
Used in Indian Cooking Was REPLACED by Coconut Oil overpowering pure spices were toned down and enhanced by fresh herbs such as lemon grass and galanga
Yaam Naem
Appetizer well known throughout the north. The success of the dish lies in the pickling process, made from minced pork and seasoned with a secret recipe. When it is served, again it is seasoned with red shallots, ginger, parsley, peppermint, green chillies and lemon according to the guests' taste.

Hoisin Sauce
Thick, sweet spicy paste made from salted fermented soy beans, onion and garlic
Jasmine Rice
Long-grained rice variety name for its delicately perfumed flavour
Kaffir Lime Leaves
Knobbly-skinned type of lime. Both the fruit and leaves are used
Kumara
Orange fleshed-sweet potato from Polynesia
Lemon Grass
Tall, clumping, lemon-smelling sharp-edged grass. (Only bulbous lower part is used)
Sambal oelek
Originally from Indonesia. A salty paste made from chili, vinegar and spices
Shrimps paste
Also called "Trasi" or "Blanchan". A pungent paste made of salted dried shrimps.
