What is double jeopardy?
If you are accused of a crime and are later acquitted, they cannot find new evidence and try you for the same crime twice
What is self-incrimination
You do not have to answer questions that expose yourself to criminal liability or prosecution (I plead the 5th)

The right to a fair trial by jury in criminal cases
Seventh amendment
The right to a fair trial by jury in civil cases
Eighth amendment
Prohibits excessive fines and excessive bail as well as cruel and unusual punishment

Protects right not enumerated in the constitution

Any powers not given to the federal government belong to the states or the people
