The unsaturated bonds create bends in fatty Acid Chain making it difficult for triglyceride molecules to pack tightly
Double Bonds → bends → less packng → liquid
Since fats don't dissolve in water, how do triglycerides get transported through blood?
They travel in lipoprotein taxis!!
