what’s mezcal?

smoky distilled spirit from agave, made in mexico. most common species of agave used = espadin. smoky flavor comes from the traditional process - agave cooked in earthern pits with wood, stones, and dirt. “mezcal” comes from “mexicali”, which means “oven-cooked agave”

what’s the difference between tequila and mezcal?

tequila can only be made from blue agave, while mezcal can be made from different agaves (mostly espadin). mezcal is also smokier
