What is the biscuit method?
1. Weigh ingredients
2. Sift dry ingredients
3. Combine dry ingredients, including sugar
4. Cut and/or rub fat into dry ingredients
5. Combine liquid ingredients including eggs
6. Add liquid ingredients to dry ingredients and mix only until everything has been incorporated
7. DO NOT OVERMIX
8. Portion and bake as required

1. Scale ingredients.
2. Place butter and/or shortening in the mixing bowl. Beat slowly until smooth and creamy.
