First step of service
30 second greet time: Greeting your table within 30 seconds by “FLAGGING”, placing a bev nap in front of each person signifies that the table has been greeted properly.
Second step of service
Take drink order: This is your chance to show off your liquor, beer and wine knowledge.

Go over features of the day
Forth step of service
Suggest appetizer/salad
Fifth step of service
Ring in appetizer/salad: Even if you have the entire order at this point, it is crucial not to ring in the entree order until the appetizer or salad has hit the table.
Sixth step of service
Take entree order: Make sure you REPEAT THE ORDER TO THE GUEST to insure accuracy and inquire about extra condiments. You can also try to get a salad order at this point.
Seventh step of service
Bring out appetizer/salad: Ring in entree order and remember to include all special instructions. Continue to refill all drinks when half full until the guests leave
Eighth step of service
Check back with table on appetizer/salad to insure food quality: Within 2 bites or 2 minutes; preform table maintenance.
Ninth step of service
Deliver entrees stating the name of each dish while placing it in front of the guest: Remember the life boat motto, “Woman and children first” before leaving the table make sure that the guests have everything that they need.
Tenth step of service
Check back within 2 bites or 2 minutes
Eleventh step of service
Check back periodically to preform table maintenance
Twelfth step of service
Return to clear all plates and silverware: All that should be left at this point is their napkin and what they’re drinking.
Thirteenth step of service
Return to table within 2 minutes of placing drink order with drinks. Suggest desserts, make recommendations, using key words: Signature dessert, most popular, best seller, my favorite is.. ect.
Fourteenth step of service
Ring in dessert order
Fifteenth step of service
Return to table with desserts and silverware
Sixteenth step of service
Check back to ensure food quality and print up check
Seventeenth step of service
Present bill and preform table maintenance
Eighteenth step of service
Return to table to pick up bill and payment within 2 minutes of payment being displayed.
Nineteenth step of service
Return with correct change/credit card receipt: If paying by credit, always use the guests name whenever possible “Thank, Mr. Smith”
Twentieth step of service
Thank the guests and invite them to return: “Thanks again Mr. Smith, and the next time you come in; feel free to ask for Michelle’s section.”
