Vitamin C helps form the endothelium lining of the blood vessels.
If the lining of the arteries damaged atherosclerosis is more likely to develop.
So in theory, if your diet is low in vitamin C, your arteries are more likely to be damaged and you are more likely to be affected by CVD’s.
