What does the omega number represent?
The position of the first double bond from the CH₃ end.
What is an omega-3 fatty acid?
First double bond occurs at carbon 3.
What is an omega-6 fatty acid?
First double bond occurs at carbon 6.
What is hydrogenation?
Addition of H₂ to a double bond to convert it to a single bond.
What does hydrogenation convert?
Unsaturated fats → saturated fats
What is partial hydrogenation?
When some double bonds are hydrogenated, often producing trans fats.
Why are trans fats unhealthy?
They increase LDL cholesterol and heart disease risk.
Why do trans fats behave like saturated fats?
Their structure is more linear, allowing tight packing.
What is a triacylglycerol?
A molecule made of glycerol + 3 fatty acids.
What bonds connect fatty acids to glycerol?
Ester bonds
What are the main functions of triacylglycerols?
Energy storage
Insulation
Protection
