Has a deep red color, a rich savory flavor, and a mild heat. Known more for its warming spices and depth of flavor than for being spicy.

a salad dish in Indian cuisine made from finely chopped raw vegetables. Fresh! (chopped tomatoes and cucumbers marinated in lime pickles, onions, and chiles)

Why do we get the whole order from the guest at once, and why is it so important
Our philosophy is to let guests relax completley while we handle the timing of each course. We pace each course appropriately based on their selections and any time restrictions.
How would you describe Paneer to someone whos never had it?
Paneer is a fresh Indian cheese. It's mild and creamy with a firm texture, so it holds its shape when cooked instead of melting.

Scotch eggs are traditionally a soft boiled egg wrapped in a sausage mixture, breaded, then deep fried. At Marigold we use a mixture of english banger sausage, dried peas, parsley, and spices

The oysters are cooked then topped with our curry creamed spinach (kale, spinach, coconut milk), butter, and parmesean, then broiled until melted and lightly crisp, then topped with breadcrumbs.
What farm do our lamb ribs come from and why is that important/special?
Freedom Run Farm in Kentucky, about 3 hours away. They are pasture raised so they are more fatty, tender, and fall off the bone, additionally, Haley and Anthony don’t like their meat to be very gamey.

How does our prime beef tartare presentation set it apart from the others?
We serve ours on a roasted bone marrow cut in half, scoopable bone marrow. Instead of traditional egg yolk we use cured egg.
Describe the tartare flavor to a guest.
Rich, buttery and silky from the bone marrow, tartar is composed of trimmings from our USDA prime steak, the tartar is also very pickle-forward, crunchy and briny from the cornichons and capers

What does pachadi mean
A South Indian fresh chutney or accompaniment. The name means 'pounded' or 'crushed,' referring to how it's traditionally prepared.
What is the process of making the curry base and the chicken itself (butter chicken curry)
The chicken is marinated overnight in a spiced yogurt, then grilled and tossed in our spiced tomato, onion, and butter (makhan) curry. The curry is thickened with coconut cream and finished with cashew labneh.

Why do we only allow pink or no pink for the steak and chips?
The steak is too thin and not uniform enough to guarantee quality/consistency. Pink=medium rare, No pink=medium-well to well
What is the preparation process of the trout
The trout is butterflied head off and deboned, and stuffed with shallots, lemons, and thyme. The fish is tied together and grilled skin side down for a nice crisp, the flavors melt into the flesh of the fish.

A tangy, spicy curry, the tanginess comes from red wine and tamarind and the spice comes from kashmiri chillis. It is spicey, bold, cumin forward and complex

Whats your Lumache like?
The Lumache is a curved, shell-shaped pasta tossed in a traditional basil pesto with pine nuts and olive oil. It's finished with creamy ricotta, fresh basil, and crispy bacon for a rich, creamy pasta with bright herbaceous flavor. Its delicious and I would call it a staff favorite, it was actually our owner’s favorite thing when he traveled to Italy so he wanted to recreate it at home.
