Gelatine

This is a natural-origin polymer prepared via the hydrolysis of collagen found in animal tissues

Bloom strength

This is a measure of gel rigidity, the load (g) required to push a 12.5 mm plunger 4 mm into a 6.66 %w/v gelatine gel at 10 C

High-bloom gelatine

This has a bloom strength of 200-250 g and is used for HGCs

Low-bloom gelatine

This has a bloom strength of ~150 g and is used for SGCs
