Non-Energy Yielding Nutrients
Nutrients that do not provide energy, including vitamins, minerals, and water.
Organic Substances
Substances made by plants or animals, more prone to destruction by heat, light, and oxygen.
Non-Organic Substances
Substances coming from the soil, absorbed by plants and eaten by animals, less prone to destruction.
Bioavailability
Quantity of nutrient that is absorbed by the body. Affected by GI efficiency and chemical form of the nutrient.
Deficiency
Point at which there is a lack of a specific nutrient.
Toxicity
Point beyond the necessary amount of a nutrient that can cause harm.
Fat-Soluble Vitamins
Vitamins soluble in fat; impact how vitamins are digested, absorbed, transported, stored, affect toxicity, and consumption.
Water-Soluble Vitamins
Vitamins soluble in water; impact how vitamins are digested, absorbed, transported, stored, affect toxicity, and consumption.
