sugar + yeast = alcohol & CO2
What is beer made from? (MWHY)
Malt
Water
Hops
Yeast
What is malt? What happens to it?
Grains (typically barley, wheat, or rye) that are partially germinated, dried, and cracked (a process called malting)

What are qualities of an ale? (speed, temperature, aromas)
Quicker fermentation speed
Warmer fermentation temperature
Range of fruity and spicy aromas possible
What are qualities of a lager (speed, temperature, aromas)
Slower fermentation speed
Cooler fermentation temperatures
Less aromas
What type of yeast is in an ale?
Top-fermenting yeast
Yeast in an ale ferments ______ at _______ temperatures
Quickly, warmer
What temperature does yeast ferment at in ale
68 F
How long does fermentation of yeast happen in an ale
7 - 10 days
What type of yeast is in an lager?
Bottom-fermenting yeast
Yeast in a lager ferments ______ at _______ temperatures
Slower, cooler
What temperature does yeast ferment at in a lager
55 to 60° F
How long does fermentation of yeast happen in a lager
Usually finishes in 10 days, BUT needs conditioning which can take 6 to 10 weeks

T or F: different water profiles create different tasting beer
T
Gose Water
Originally comes from the Gose river in Leipzig Germany
River has a high salinity content
High salinity became a trademark taste for the beer’s tasting profile
Now, brewers who don’t have access to the Gose river will add salt to emulate that trademark taste
How do hops grow
Hops are a flower that grows on a bine
Sunlight and climate are big contributors
New developments in growth are similar to the grow room practices of marijuana
Hot Side
adds bitterness & shelf-stability
Cold Side
adds fruity & floral flavors
Is also called dry hopping
essential oils are preserved
What is the most important ingredient in beer
yeast
Yeast is a f_ _ _ _ _
fungus
What does yeast do
Converts sugars into two biproducts: ethanoyl and CO2
Yeast is an aerobic and anerobic organism, what does that mean?
Aerobic means "with oxygen"
Anaerobic means "without oxygen"
T or F: Beer can only ever be a lager or an ale
F
How do hybrids work?
Ale yeast fermented at lager temperature
Lager yeast fermented at ale
temperature
How Beer Has Been Perceived in Hospitality?
Working mans drink
Drink that was popularized and came to the US through imports
What was the craft beer revolution
We started learning about
better ingredients
better yeast production/science
barrel aging
What should/shouldn’t you do with beer
No frosted glasses (nullifies flavor profile)
No green or clear bottles (brown bottles protect from light damage)
When pouring there should be 2 fingers worth of head
What are the 4 steps in the process for drinking/enjoying beer
appearance
aroma
taste
mouth feel (thickness)
