Creaming Method
A method involving beating fat (such as butter) and sugar together until light and fluffy to incorporate air and produce a light texture.
Muffin Method
A method specifically used for muffins and similar quick breads that requires minimal mixing to avoid overdeveloping gluten.
Foaming Method
A mixing technique often used for sponge cakes that depends on whipped or beaten eggs as the primary source of aeration, structure, and volume.
Straight Dough Method
A mixing method commonly used in bread making.
Overmixing
Excessive mixing that overdevelops gluten, making baked products tough and creating tunnels in muffins.
Kneading
The process of working dough that develops gluten, giving bread its structure and chewy texture.
Fermentation (Proofing) Stage
The process of allowing dough to rise as yeast produces carbon dioxide gas, which helps the dough develop volume and texture.
Yeast
A leavening agent used in bread making that produces carbon dioxide gas to cause dough to rise.
Banana Bread
A type of quick bread that relies on chemical leavening agents such as baking powder or baking soda rather than yeast.
Whole Wheat Bread
Bread made mainly from whole wheat flour, retaining the bran and germ, which provides the highest fiber content.
White Bread
Bread typically made from refined wheat flour, giving it a lighter color and softer texture.
French Bread (Baguette)
A type of bread characterized by an elongated long loaf shape and a crisp, crusty exterior.
Rye Bread
A type of bread known for its distinctive flavor and denser texture compared to softer breads like white bread, milk bread, and pandesal.
Bread Rolls Baking Temperature
Baking temperature set at 220∘C, which is generally higher than the oven temperature used for regular cakes.
Standard Cake Baking Temperature
An oven temperature of 180∘C commonly used for baking most standard cakes and sponge cakes to produce a light texture and even rise.
Cookie Baking Temperature
An oven temperature of 190∘C (375∘F) used mainly to allow cookies to brown and bake evenly.
Effect of Excessive Oven Heat
Occurs when oven temperature is too high, causing the outer surface to cook and brown too quickly while the inside remains undercooked.
Effect of Low Oven Heat (150∘C)
An oven setting where bread may end up underbaked and lacking proper volume.
Effect of Hot Water on Yeast
Water that is too hot can kill yeast, preventing fermentation and rising of the dough.
Indicators of Underbaking
Visual and physical cues such as a pale crust and a gummy center.
Indicators of Inadequate Proofing
A condition resulting in a dense loaf with little rise, caused by insufficient proofing or poor yeast activity.
Bread Preparation Sequence
The correct step-by-step order: measuring ingredients, kneading, allowing dough to rise, shaping, and baking.
Starting Point of Business Development
Identifying a business opportunity or customer need.
