What are the cooking techniques and how can you reduce the loss of nutrients/ avoid it

Boiling potatoes- water soluble vitamin c/b dissolve and minerals leach into the water. To avoid- use cooking water for other meals/freeze it

Pan frying salmon- water soluble vitamin c lost via high heat. To avoid this you could steam it/ add a fruit/veg sauce to replace vitamin.

Steaming broccoli- healthier alternative to boiling, no nutrients lost.
