  • Twirl the wine in your glass for 10 to 30 seconds for quick, light aeration.

  • Using an aerator: Pour the wine through a handheld spout aerator for instant oxygen infusion.

  • Decanting: Pour the full bottle into a wide-bottomed glass vessel and let it sit for 30 to 60 minutes. ]

  • Aerating wine exposes it to oxygen to soften harsh tannins, release hidden aromas, and improve flavor. It works best for young, bold red wines like Cabernet Sauvignon or Syrah. Light whites, rosés, and fragile aged wines generally do not need it and can lose their structure.

If a beautiful full bodied glass or bottle of red wine has not been ordered, I would def upsell that. Perhaps a Cab Franc or Cab Sauvignon Would also think of savory meaty vegetables

lamb is a wonderful tender rich and gamey red meat. I would not suggest a cooking temp above medium depending on the sauce a light bodied or medium bodied glass of red wine would pair nicely

oscar style refers to a luxurious of multy textured approach to layering crab with a filet steak, complimented with with a vegetable like asparagus and finished with a creamy sauce like Bearnaise with Hollandaise

béarnaise sauce

is a direct daughter sauce of Hollandaise. Both use an egg yolk and melted butter base, but Béarnaise swaps lemon for a reduction of white wine vinegar, shallots, fresh tarragon, and cracked pepper.
