Why wine was going off, using a microscope to see that there was bacteria in the wine
What wine experiment did Pasteur perform?
He heated the wine to kill all bacteria, then placed a sample in glass bottles, one of which he left exposed to the air while the other he sealed - the one which was exposed went off with bacteria inside, while the other was bacteria-free. This suggested that bacteria was found in the air

You could immunise a chicken from chicken cholera by injecting it with a small dose of cholera to prevent it from future attacks
