Step one
Harvest grapes: only the healthiest and perfectly ripe grapes are selected for harvest. Carefully selecting the grapes helps ensure that the wine will not be compromised

Extract grapes: selected grapes are then gently crushed and pressed to release the fresh juice

Fermentation: yeast is used to convert natural sugars into alcohol and carbon dioxide

Pressure: the wine matures in barrels or tanks to develop

The first step and 2nd step is to
Decide when to pick the grapes. Once picked they are shipped to the winery in cool conditions. The 2nd step is processing which is done by hand to remove unwanted materials
Red wine
-must decide whether to destem the grapes or ferment them as whole clusters
-minimal crushing of the berries, having the berries whole releases more specific flavors
-fermenting must be done with the skins and the seeds present because all of the color in wine comes from the skins
-fermenting comes first then pressed later on. This is done with a basket press
White wine
-the juice needs to be separated from the skins and the seeds before fermentation, wine barrels are often used for whites
Rose wines
-red grapes may go directly to the press and is handled like white wine or it can be made from saignee
