Johnston's pork
The source of bacon for Maxines Breakfast, located in Chilliwack.
Legends Haul
The producer of the pork-based farmer's sausage made specifically for Maxine's.
Kennebec potato
The type of potato that is shredded and fried to create the crispy potato and the rostis.
La Baguette
The source for all bread used in the restaurant, including sourdough, brioche, and multigrain, except for the gluten-free options.
Tomato aioli
A condiment used on the Breakfast BLT made with roasted roma tomatoes, garlic, shallot, and white vinegar.
Simple Omelette eggs
A dish prepared using 3 eggs from Colony Creek.
House made boursin cheese
A mixture containing cream cheese, goat cheese, shallot/garlic confit, pickled shallots, and nutritional yeast.
Ex Animo
The source of the croissant loaf used for the Tiramisu Croissant French Toast and all other croissants.
Coffee syrup
A syrup made with espresso, brown sugar, and corn syrup.
Royale (Tiramisu French Toast)
The liquid the croissant is dipped in, consisting of heavy cream, eggs, vanilla, and cinnamon.
Kale Caesar preparation
Green kale that has been massaged with salt to break it down for digestion.
Dutch Baby
A large American popover, also known as a German pancake, a Bismarck, a Dutch puff, or a Hootenanny; it is similar to a large Yorkshire pudding.
Maxines Smash Burger patty
A patty that is specifically 3oz in weight.
Harwood Burger patty
A patty that is 6oz in weight and cooked medium.
Cucumber kimchi
A fresh kimchi made with brined cucumbers and a paste of Korean chili powder, flakes, garlic, ginger, and fish sauce.
Bulgogi dressing
A seasoning liquid for the Pork Belly Rice Bowl made of tamari, Korean corn syrup, mirin, sesame oil, and rice vinegar.
Rafs’s chorizo
Pork sausage marinated with guajillo/ancho chiles, onion, garlic, cumin, and clove used in the Huevos en Salsa Roja.
Salsa Macha
A blended sauce made from peanuts, seeds, chilies, and oil used on the Avocado Rosti.
Pistou
A French version of pesto containing only basil, garlic, and lemon zest, without nuts or cheese.
House made sauerkraut
A fermented cabbage topping containing caraway seeds that has been fermented for 4 days.
Thousand island dressing
A sauce used on the Brisket Rosti containing aioli, chili sauce, cornichons, raw onions, worcestshire, and tabasco.
Ocean Wise sockeye salmon
The smoked salmon sourced from Nanuk brand, used in the Smoked Salmon Rosti and Benedict.
Thermidor hollandaise
A specialized sauce for the Spot Prawn Benedict made of egg yolks, vinegar, butter, Tabasco, lemon, and a spot prawn and lobster reduction.
Sauce Gaston Gerard
A sauce used for Savory Crepes consisting of red wine chicken jus, cream, gruyere, and Dijon.
Hollandaise
A standard sauce made from egg yolks, vinegar, butter, Tabasco, and lemon.
Aioli
A simple condiment consisting of garlic, egg yolks, and canola oil.
Maxine’s Breakfast
· 2 Eggs from Colony Creek eggs (Abbotsford)
· Bacon from Johnston's pork (Chilliwack)
· Farmer's sausage is pork-based (Legends Haul makes this sausage specifically for us)
· Kennebec potato shredded and fried
· Choice of sourdough/brioche/multigrain/ GF sub $2 (all bread is from La Baguette except gluten free from GFS)
Allergies: gluten (can be done without on GF bun $2), Veggie option to sub avocado, eggs(can be done without)
BREAKFAST BLT
Maxines bacon, tomato aioli, cheddar cheese skirt, brioche, over medium fried egg, iceberg, tomato
· Brioche from La Baguette
· Single fried egg
· Tomato aioli, made with roasted roma tomatoes, garlic, shallot and white vinegar
· Mild yellow cheddar cheese skirt
· Iceberg dressed with lemon vinaigrette
Allergies: Gluten (can be done on GF bun $2), allium, egg, pork
SIMPLE OMELETTE
Boursin cheese, fine herbs, mornay, fries or salad
· 3 eggs From Colony Creek
· Gruyere cheese mornay
· Comes with French fries or side salad

TIRAMISU CROISSANT FRENCH TOAST
Whipped mascarpone, coffee syrup, cocoa powder
· Croissant loaf from Ex Animo, our croissants are from them
· Coffee syrup is made with espresso, brown sugar and corn syrup
· Whipped mascarpone consists of sugar, cream cheese, mascarpone, vanilla
· Dusting of cocoa powder to finish
· Croissant is dipped in royale which is heavy cream, eggs, vanilla, cinnamon
KALE CAESAR
seeds, roasted garlic vinaigrette, Grana

· Our version of a kale Caesar salad,
· Green kale massaged with salt to break It down and able to be digested.

WEDGE SALAD
Iceberg lettuce, green goddess, lemon vin, clothbound cheddar, dill, chives, hard egg, Maxine's bacon

Dutch Baby
House back bacon, mornay, fried egg, gruyere
· A Dutch baby pancake, sometimes called a German pancake, a Bismarck, a Dutch puff, or a Hootenanny, is a large American popover. A Dutch baby is like a large Yorkshire pudding.

Pork Belly Rice Bowl
Garlic fried rice, bulgogi vinaigrette, cucumber kimchi, fried tofu, pickled vegetables, fried egg, smoked pork belly
· Steamed, dried and garlic fried rice
· Fresh cucumber kimchi is made with brined cucumbers. Fresh kimchi paste made with Korean chili powder and flakes along with garlic, ginger and fish sauce.
· Vegetables pickled: carrots, daikon
· Bulgogi dressing: tamari, Korean corn syrup, mirin, sesame oil, rice vinegar
· Tofu is cut and fried in corn starch
· Fried egg on top.

Huevos En Salsa Roja
Soft scrambled eggs, Rafs’s chorizo, red salsa, feta, warm tortilla

Avocado Rosti
Fried Avocado, Smashed avocado, pickled shallots, toasted seeds, poached eggs, salsa macha
