always refer to the Standard Operating Procedure whenever in doubt of a certain thing or procedure
Clocking in and out
- earliest you can clock in is 5 mins before
- latest you can clock out is 5 mins after (special for closing)
Damage log (on Ipad)
- use to report broken macrons and other items
- report to management if urgent (ur best judgement), use store phone to call management
examples:
- little to no ice in the machine
- ice machine isn't making any ice
- blender makes weird unusual noises
- smell of something burning or gas
- internet isn't working
- bathroom is clogged
- drain is flooding
- health inspector visit, etc
Free drink policy
- for baristas only
- one free drink per shift (any drink/size , NO VIET COFFEE)
- policy doesn't stack up or carry over to next shift
- doesn't work after a shift is worked
- use employee discount for yourself and family/friends
- bring ur own water, leave the plastic cups for customers
Cell phone policy
- ALWAYS keep your phone in the charging station
- if on break, go outside the barista area (or you will be cited)
Cash handling
5 methods to determine fake bills (refuse if unsure)
1) Security thread - hold bill up to the light. located on the left side of $20. thread is not printed onto the bill
2) look, feel, and texture
3) counterfeit pen
4) colour shifting ink
5) bill reader. Always use bill reader for $20
Sampling
we encourage it
- we can sample anything that is already premade
- we can sometimes sample blended drinks if there is some leftover in the blender that is untouched
What is boba
boba is made from tapioca which is a gluten-free starch that is extracted from the root of a casava plant (250 cals)
Crystal boba
healthier alternative for boba. an agar infused tapioca that is gluten-free, and vegan (50cals)
Drink toppings/add ons

Drink toppings/add on RULE
NEVER serve boba, jellies, whip cream and other condiments "on the side"
ALL add-ons need to go with a drink
Snowbubble
a blended drink using a non-dairy creamer base + whole milk
- more creamier than icy
(can substitute milk : almond, soy, coconut, oat )
Slushy / icy
a blended drink using ice + water as a base + flavored syrups
Cha-Mango
A mango based icy using real mangos, chamoy, tajin, and tamarind candy
Red Bull Icy
8.4 oz of redbull + ice + flavored syrups (LARGE SIZE)
- use 3/4ths of the redbull can and give the leftover to the customer
- use 1 can of redbull for each large drink
Milk tea
Referred to as "latte" or iced
Black tea base + non-dairy creamer
Yogurt snow
blended non-fat plain yogurt drizzled in fresh fruit sauce + topped with fresh fruit like strawberry, mango, kiwi
- can also be served plain without fruits/syrup for a tartier taste
Vietnamese coffee
a strong dark roast coffe containing 1 shot per oz
- served by the ounce, 8 ounces in a regular 16 oz cup
- 16oz cup + fill cup with ice + 8oz coffee
- always confirm with the customer that it is served by the ounce so it will only fill the cup less than halfway if they dont get ice
- customers CANNOT request for more coffee, bc we sell it by the ounce
Macrons / ice cream macarons
french cookie with a meringue-like consistency , made with egg whites and powdered almonds
- we have a baker in a commercial itchen
- we cater special request with a 50 piece minimum
ice cream macarons are in the back freezer
both of these items are gluten free
Customization
we honor customization like sweetness level, ice, and milk substitutes
BUT if what the customer requests isn't chargable in the system, then politely tell them no and then try to recommend something closest to what they would like
- we cannot guarantee the taste of drinks outside our menu
Bricktoast
2" thick, well-toasted bread, glazed in honey or creamy butter, topped with powdered sugar and whip cream
- can add toppings like ice cream, sauces, fruits
Non-dairy
- any snowbubble with whole milk
- ALL slushies
- most of the milk teas
anything that doesn't have a mil base or can be substituted with almond, coconut or soy
Vegan
Similar to dairy free
Anything with no animal bi-products or can be substituted with almond, coconut, or soy
Gluten-free
- all of our drinks
- macaroons + ice cream macarons
NOT BRICKTOAST
- if ur ever unsure, ask and call management
Measuring
ALWAYS use some form of measurement
NEVER eyeball a measurement
Pumps
Syrup (blue) - 1/2 per oz = 2 pumps for 1 oz
DaVinci (golden) - 3/4 per oz = 3 pumps for 1 oz
Measuring cups
- stainless steel double jiggers which are 1oz on the small end and 2oz on the big end
- 8 oz max for liquid measuring cups
- blenders can be use for measuring larger volumes like yogurt mix (16-48oz)
Drink cups
> 8 oz max = water cups
> 12 oz max = regular HOT cups
> 16 oz max = regular cups & large HOT cups
> 24 oz max = large cups
Scoopers
Ice scooper
- regular blended drink = 1 scoops of ice
- large blended drink = 1.5 scoops of ice
Powder scooper (RED)
- notice the 1/2 powder line
- 1 scoop = 1 rs
- scoop needs to be FLAT
Condiment scooper
- for boba, jellies, etc.
- scoop needs to be FLAT and drain the syrup when scooping
Filling cup levels : condiments
boba, jellies, etc, should NEVER go past the 1st bump unless its a double scoop order
Filling cup levels : icing
for liquid drinks, ALWAYS reach the 2nd bump
- for viet coffee fill the whole cup with ice tho
> light ice = fill half of the cup with ice for both sizes
> no ice = fill the liquid to the 4th bump for both sizes
Filling cup levels : layered drinks
thai, green thai tea bases stops at the 3rd bump, --> then followed by the top off half n half
> machata = horchata to the 3rd bump + organic matcha
> dragon and jasmine MT bases stop at the 2nd bump + top off liquid
Split cups
only offer split cups for LARGE SNOWBUBBLE DRINKS
- ring up as LARGE + SPLIT CUP
- make the drink as usual and then pour it into 2 regular cups and seal
Lids
> flat lids = for emergencies when sealer doesn't work
> dome lids = for snowbubbles, chamango, and redbull
> seal = all teas and slushies except redbull and chamango
Blenders
NEVER = bang, slam, yank
NEVER = pulse for more than 10 secs
wait for it to come to a complete stop before you open it
- lift up then out
- open the cover, lift up then out
Tea shaker
- for flavored teas and milk teas
- press green button for it to shake for 20 secs
NEVER clean the front of the shaker when its plugged in, unplug it first
Fridge and prep station
- ALWAYS keep the doors and covers closed
- take what u need and close
