Winterising, Commercial hydrogenation, Interesterification, and Industrial Processing.
What is the objective of Winterising
To ensure the oil remains clear and stable in low temperatures.
Why would oil go cloudy without winterising?
Veg oils contain some saturated fatty acids which will crystallise out and make the oil go cloudy if the temperature is lowered
How to winterise oil?
Keep it at 5C, where the majority of crystalisation occurs. then fitler out the crystals.
What is the objective of commercial hydrogenation?
To convert vegetable oils into fats (a.k.a. increasing melting point), and to extend shelf life by increasing oxidative stability.
