What do all lipids contain?
A hydrocarbon chain attached to a carboxyl group.
What is the result of fatty acids containing hydrocarbon chains?
They are considered large nonpolar molecules.
What is a saturated fatty acid?
Contains no double bonds between its carbon atoms.
What is an unsaturated fatty acid?
Contains one or more double bonds between its carbon atoms.
What is a triglyceride made of?
Three fatty acids and one glycerol molecule joined with ester bonds.
What happens since triglycerides are nonpolar molecules?
They are hydrophobic and insoluble in water.
What is a phospholipid made of?
A head consisting of a phosphate group bonded to one molecule of glycerol, and two fatty acid tails.
What are the characteristics of phospholipid tails?
Nonpolar, hydrophobic, and insoluble in water.
What is the polarity of the phospholipid head?
It is polar.
What are the components needed to perform the emulsion test?
Food sample, alcohol, water.
What indicates a positive emulsion test?
A milky white color appears.
