Amylase
A digestive enzyme that speeds up the chemical breakdown (hydrolysis) of starches into simple sugars (monosaccharides)
Salivary amylase
(ptyalin {ty-len}) enzyme produced in saliva to help omnivores start the digestion of carbohydrates

a linear polysaccharide carbohydrate made of hundreds of thousands of glucose units joined together in a straight chain (starch)
