What is denaturation
The change in structure of protien molecules (unfolding)
Why does denaturation occur?
Heat, PH, mechanical action and salts can all contribute to denaturation
What is partially reversible?
It can partially go back to its previous state, such as when an egg white is whiisked
What is coagulation?
Coagulation follows denaturation. the heat causes the proteins to unfold from their coiled state and form a solid stable network

skin formed on top of heated milk
Examples of coagulation
meat fibres become firm
egg whites changing from a clear liquid to a white solid
How does denaturation effect the nutritional value of foods
It is generally unchanged, and denatured proteins are more easily digested

Picture two: Denaturation is when molecules in the protein are being broken down. This happens when the proteins are physically agitated, heated or marinated in acid

Picture three: Coagulation is when the denatured proteins join back to together. This occurs when heat is applied to the protein.
