Essentially freeze dry their meat.
The freezing crystalizes the water and draws it out. It looks burnt. It is called Ch'arki or Jerky

It needs to fit high up close to the eyes, the bone does not go far past their eyes so if it doesn't fit well it will make it hard for them to breath
