You use “el” before Mr. Ramirez because you are talking about him.

Good morning Mrs. Lopez.
You don’t use “la” before Señora López because you are talking to her.
El español es un idioma romance.
Spanish is a romance language.
We use “el” or “la” when we talk about languages like it were a thing.
El español viene del latín.
Spanish comes from Latin.
Notice that “de” means from soooo: de + el = del
Hablo español.
I speak Spanish.
We drop the article “el” because we are actually doing an action with it.
Same with:
I learn Spanish = Aprendo español.
Vamos de compras el miércoles.
We go shopping on Wednesdays.
We add “el” to talk about specific days of the week.
No tenemos clases los sábados.
We don’t have clases on Saturdays.
El verano es una estación.
Summer is a season.
We add “el” to the season.
Hace frío en invierno.
It’s cold in winter.
Sometimes we drop the “el” but
“Hace frío en el invierno.” is also correct.
Vamos al doctor.
We go to the doctor.
Instead of:
Vamos a el doctor.
We add “a + el” and make “al”
