Describe the taste of Casteggio Sangue di Guida and what it pairs well with.
Sangue di Giuda (literally meaning Blood of Judas) is a sparkling, or 'frizzante' style sweet red from the Lombardy region of Oltrepo' Pavese. Using 80% Croatina (locally known as 'Bonarda'), and 20% Uva Rara, this red is aromatic and fresh, with ripe cherry and hints of blackberry and plum fruit.
Pair with dessert (chocolate, fruit tarts especially), as a stand alone digestif, or any meat dish, from a beautiful roast to a plate of thinly sliced beef Carpaccio.

Riesling is the darling of Alsace, and a favorite of wine lovers worldwide, because it's both versatile and budget friendly. Produced in dry and off-dry styles, Alsatian Rieslings are typically fresh and crisp, with racy acidity and compelling aromas of pears, apples, lemons, flowers and spice.
The appealing minerality shining through these wines is due to the dry, sunny climate and the soil types found in the region. A mix of granite, limestone, schist, and sandstone is typical.

Uni is a California white blend from Ballard Canyon, typically featuring a mix of 40% Roussanne and 60% Chardonnay. This is a high amount of Roussanne, which is usually used as a small scale supporting wine and designated by the French to be allowed to support white wine blends. Specifically designed to pair with sea urchin (uni), the 2022 vintage offers a crisp, textured profile with notes of tropical fruit, citrus, and honeysuckle, frequently characterized by a "cold steel" minerality. Originally created Uni in 2016 as an exclusive for the Uchi Sushi Group out of Austin, Texas.
