What are tocopherols?

  1. α form most active

  2. Tocopherols are extremely resistant to heat but are easily oxidized. They rancid fats easily & destroy the vitamin

  3. Vit. E protects certain dietary constituents from oxidative destruction such as carotene in intestines

  4. In body tissues; it also prevents the formation of peroxides from the unsaturated fatty acids that would destroy structural integrity of cells.
