  • Espresso marked with foam

  • Served in a demitasse espresso cup (if to go, 8oz paper cup)

  • Traditional- 2:1 espresso to milk ratio

Steps

  1. Grab mug/cup

  2. Pull double shot of espresso and steam a little bit of milk

  3. Pour double shot into cup

  4. Spoon or pour milk on top of espresso

    1. if using a to-go cup, do not fill the full cup. Spoon a few scoops of milk on top of the espresso.

  • Horchata powder added to latte

    • Vanilla, cinnamon, whey, cane sugar in a rice based powder

  4. If horchata was int he shot demitasse, stir well

  5. Place shots in the cup

How is a cappuccino made?

  • 1/3 espresso, 1/3 steamed milk, 1/3 of foam (1/2’’ of foam)

    • Finish stretching the milk before it gets to 100 degrees to make a whirlpool

    • Unless making a dry cappuccino, the milk should still spin in the whirlpool. If it does not move, you over-stretched the milk

  1. Grab cup- default to 12oz

  2. Pull correct # of shots and steam milk. Milk should have more foam than latte milk, but it should still have microfoam

  3. Place shots in cup

  4. Pour milk over shots

How to make a flavored steamer/hot chocolate?

Use almost double the powder

  1. Grab mug or cup

  2. Measure milk out in the cup leaving about an inch of room

  3. Pour milk into steaming pitcher

  4. If hot chocolate, add powder to milk

  5. Steam milk

  6. If a steamer, add syrup in bottom of the cup and pour steamed milk in top

  7. Add whipped cream if desired

  1. Grab cup or mug

  2. Measure milk in the cup leaving room for milk to expand

  3. Pour into the steaming pitcher

  4. Add correct amount of matcha into steaming pitcher

    1. Small- Heaping ½ tsp

    2. Medium- 1 tsp

    3. Large- Heaping tsp

  5. Steam milk and matcha mix to 130 deg

    1. If customer wants it sweetened add correct amount of vanilla to cup

      1. Small- 1 pump

      2. Medium- 3 pump

      3. Large- 4 pump

  6. Pour steamed matcha mix into cup

  3. As shots are cooling, pour milk (and flavor) an inch below the top of the colored bar on the cup

  4. Pour shots into the drink

  5. Fill with ice to the top
