Wagyu Hot Rock

Snow Beef - From Hokkaido. Extra cold there means extra fat. Melts in your month.
Olive Beef - Cows only eat olives for last 3 months of their lives. Natural saltiness and MSG.
*You know it’s done when it removes cleanly from hot plate
*Wagyu breed of cattle indigenous to japan. Basically interweave of fat and muscle to create marble and consistency. Fun fact: Fat renders at lower temp than any other cattle > makes it consistently fatty. Kobe is the most expensive and most consistent (most stringent standards). Misconceptions:
a lot of people get kobe and wagyu confused
a lot of people lie about using kobe (only 15-20 restaurants in NYC really have it)

Miso Wagyu Flatiron
Mushroom encrusted 6oz thinly sliced stone axe wagyu (kobe fat) topped with brown butter, gayaki (eel sauce), scallions, and mustard oil.
Steak is sous vide first, second seared on plancha, then finished over Japanese charcoal grill to give Smokey flavor.
Steak is glazed with shio blonde miso and roasted garlic puree. Encrusted with trumpet, oyster, and shiitake mushrooms and ginger.

From Westholm, Australia. Cross breed between black angus cattle and Japanese wagyu. Stone axe farm, a different farm in Australia, also has wagyu (this is where the flatiron steak is from).

Just want to explain the menu to you all very quick — The first 2 pages are cocktails and wines by the glass. Second 2 pages are for food. We’re currently celebrating our 15-year anniversary with new dishes, all marked with the “15” logo, alongside our classics, plus an entirely new cocktail program.
On the left side of the menu, everything is designed to be shared. I’d recommend the tuna rice cake by the piece and the crab hand roll — both great one-bite items.
On the right side, you’ll find our hot starters and pastas, which we think of as mid-courses, followed by entrees and sides.
We also have our specials for the night which are…XYZ.
Happy to give recommendations or answer any questions. But before we get into that, can I start you off with a cocktail?
Sushi (General)
Sushi rice is consistent > seaweed w/ mirin and rice vinegar. Any sushi has alcohol allergy. To avoid it, if you are keto/low card (don’t want alcohol) > order cucumber roll (no rice, wrapped in long cucumber). Other pivot is using unseasoned brown rice.
Any fish you can make sushi with > hamachi, tuna, salmon, shrimp, and scallop.
Any non-speciality sushi can be made hand or cut > hand rolls will take longer
Speciality rolls are fatter than non-speciatlity rolls, that’s why there’s 5 and not 6.
Two important things:
surf and turf roll cannot be modified
can modify any other sushi roll basicaly any way
