Paccheri
Large tube-shaped pasta whose name comes from the Neapolitan word for "Slaps" due to the sound made when eaten.
Cavatelli
Small pasta shells that resemble small hot dog buns; the house version contains ricotta.
Meat Sauce
A gluten-free sauce made with veal, beef, pork sausage, tomatoes, garlic, bay leaves, red wine, onions, celery, and carrots.
Cream Sauce
A gluten-free sauce made with half and half, heavy cream, butter, garlic, and Romano cheese; does not contain egg and is not an Alfredo sauce.
