Optimum Temperature
The temperature at which enzymes work best and are most active.
Enzymes
Proteins that act as catalysts to accelerate chemical reactions.
Starch Conversion
The process by which starch is broken down, such as to sugars, at high rates by enzymes.
Activity Rate
The speed at which an enzyme catalyzes a reaction, highest at optimum temperature.
High Rate
Indicates the efficiency of an enzyme in converting substrates at optimum conditions.
