Poultry
Several kinds of fowl that are used as food, including chicken, turkey, duck, pigeon, and quail.
Fowl
The flesh of domesticated birds as food; poultry.
Game
Birds such as smites that are hunted for food.
Smites
A heavy blow or stroke with a weapon or the hand.
Dark Muscles
Muscles found in parts of a fowl's body that are always used (legs, thigh, wings, neck, and rib cage), which are richer in fat, have more connective tissues, and contain higher levels of riboflavin and myoglobin.
Riboflavin
A vitamin needed for growth and overall good health that helps the body break down carbohydrates, proteins, and fats to produce energy and allows oxygen to be used by the body.
Myoglobin
An iron- and oxygen-binding protein (symbol Mb or MB) that acts as the primary oxygen-carrying pigment of muscle tissues.
White Meat
The breast muscle of the chicken.
Variety Meats
Refers to the meat of internal organs such as the gizzard, heart, kidneys, and liver.
Slaughtering and Bleeding
The killing of animals for food, serving as the first step in preparing poultry for cooking.
Scalding
Immersing poultry briefly in boiling water to facilitate the removal of skin or feathers and to preserve meat.
Defeathering
The process of removing feathers from poultry in preparation for cooking.
Evisceration
The process of removing the viscera or internal organs of poultry.
Deboning
The process of removing bones from poultry.
Broiler or Fryer
A young chicken, usually 9 to 12 weeks of age, of either sex, with tender meat and soft, pliable, smooth-textured skin.
Roaster
A chicken usually 5 to 6 months of age (less than 8 months old) weighing 321 to 5 pounds.
Capon
A surgically desexed (castrated) male chicken usually under 8 months of age that grows more slowly, puts on more body fat, and yields tender, flavorful meat.
Stag
A male chicken, usually under 10 months of age, with coarse skin and somewhat toughened, darkened flesh.
Hen or Stewing Chicken
A mature female chicken (also called a layer) usually more than 10 months of age and weighing 5 to 7 pounds.
Cock or Rooster
A mature male chicken over 10 months old weighing 6 to 8 pounds, with coarse skin, toughened, darkened meat, and a hardened breastbone tip.
Jumbo Broiler
A large chicken of about 4kg dressed weight that is offered on sale especially during the Christmas holiday.
