Define Nigori
Unfiltered or coarsely filtered sake that retains some rice solids, leading to a cloudy appearance and fuller mouthfeel. Often sweet.
Define Tokubetsu
“Special,” often listed in tandem with specific style (ex: Tokubetsu Junmai). Denotes a step up in quality due to an elevated or distinctive production method, using things like special yeast, higher polish rice, unique rice, etc.
Define Junmai
“Pure rice” meaning that the sake was produced with only rice, koji, yeast, and water, with no added alcohol. Usually has a richer, fuller mouthfeel and pronounced rice-derived flavors.
Define Ginjo
A premium grade of sake where the rice is milled to 60% of its original size, brewed with labor intensive techniques and lower fermentation temperatures, leading to an aromatic, fruity, and delicate flavor profile.
Define Futushu
“Tableside” sake. Includes added brewer’s alcohol.
