What does it mean Namasake?
Nama (生) literally means raw or fresh. In the context of Sake, it refers to 'unpasteurized' (skips the heating process)
Zake (酒) is the same as Sake. So Namazake literally means (raw, fresh) unpasteurized Sake.
What is the polishiong Ration - Seimai Buai?
the remaining weight of rice grain after polishing off outer layers
For example if 30% of original rice grain has been removed, leaving the central 70% - polishing ratio is 70%.
