Monosaccharides
—Simple sugars

Polysaccharides
—Polymers of monosaccharides
—Enzymes can catalyze the oligomerization of mono to form poly
→Condensation (dehydration) reaction forms a glycosidic bond between one anomeric carbon and one non-anomeric carbon on neighbouring monomers
—Chemically inert because anomeric carbon is locked into place

Common polysaccharides
STARCH: linear, glucose monomers linked by alpha-1,4 glycosidic bonds
GLYCOGEN: branched, glucose monomers linked by alpha-1,4 bonds, branches from alpha-1,6 bonds
CELLULOSE: glucose linked by beta-1,4 bonds, humans unable to digest this bond, cellulase secreted by herbibvores does
