RULE #1 for allergen questions
These cards are read off the printed menu descriptions — they are NOT a kitchen allergen chart. For any guest with a real allergy, always walk it back to the kitchen and confirm. Say: "Let me check with the kitchen so I get that exactly right."
Which items contain TREE NUTS (pecans)?
Strawberry Salad (pecans) and Cole Slaw (praline pecans). Those are the two to flag immediately on a nut allergy.
Which side is off-limits for a nut allergy?
Cole Slaw — it has praline pecans. Offer potato salad instead. (Potato salad has dairy, though — dill herb CREAM sauce.)
Which salad is off-limits for a nut allergy?
Strawberry Salad (pecans). Offer the House salad — leaf lettuce, tomato, onion, no cheese, no croutons.
Safest salad for a dairy-free guest?
House salad, no dressing on it — leaf lettuce, tomato, onion. Caesar has parmesan AND Caesar dressing; Strawberry has parmesan. Blush wine vinaigrette is the dressing to reach for.
Which items obviously contain DAIRY?
Chips & Queso, Bar W Jalapeño Pimento Cheese, all six flat breads (mozzarella), Bar W Burger (double cheddar), Jalapeño Pimento Cheese BLT, Caesar and Strawberry salads (parmesan), ranch and Caesar dressings, Potato Salad (cream sauce), Cole Slaw (blue cheese), both desserts.
Which items contain GLUTEN / wheat?
Pepperoni Roll and Philly Cheesesteak Roll (roll), all flat breads (crust), all Sandos (bun / Texas toast), Caesar salad (croutons), the salad wrap option, Ice Cream Sandwich (cookies), Apple Pie Bites, and all beer.
What can a gluten-avoiding guest actually order?
Chips & Salsa or Chips & Queso (corn tortilla chips — but confirm the fryer with the kitchen), House or Strawberry salad, Caesar with no croutons. To drink: Austin Eastciders (all three), High Noon, or a cocktail. Never promise "gluten free" — say "no gluten ingredients listed, let me confirm with the kitchen."
Which items contain PORK?
Bacon (add-on, BLT, Chicken Bacon Ranch flat bread), Pulled Pork Sando, Pepperoni Roll, Pepperoni Flat Bread, Fennel Sausage Flat Bread, Italian Sausage queso add.
Which items are vegetarian as written?
Chips & Salsa, Chips & Queso, Bar W Jalapeño Pimento Cheese, House salad, Caesar salad (dressing contains anchovy — flag it), Strawberry salad, Margherita Flat Bread, Veggie Lover Flat Bread, Potato Salad, both desserts.
Vegetarian trap to watch for
Caesar dressing traditionally contains anchovy. If a guest says vegetarian, mention it and offer ranch or blush wine vinaigrette instead.
Which flat bread is the vegetarian one?
Veggie Lover — marinara, normandy blend, roasted garlic, mozzarella. Margherita also works (marinara, mozzarella, tomato, basil, balsamic).
Spicy items to flag
Bar W Jalapeño Pimento Cheese and the Jalapeño Pimento Cheese BLT (jalapeño), Pepperoni Roll and Pepperoni Flat Bread (hot honey), signature salsa. Ask "how do you feel about heat?" before you recommend the pimento cheese.

Guest asks for a burger with no bun
Ring it in as the Bar W Burger with a modifier note. Confirm with the kitchen whether it comes on lettuce or in a bowl — don't assume.
Guest says "I'm allergic to X" — what's the sequence?
1) Don't guess. 2) Repeat the allergy back to them. 3) Tell the kitchen verbally AND in the ticket note. 4) Come back with the kitchen's answer, not yours. 5) Run the plate yourself if you can.
