Sponge Cake

Plain Cake Recipe Ingredients:

  • 2 whole eggs

  • Granulated sugar: 120 g

  • Cake flour: 130 g

  • Vegetable oil: 40 g

  • Milk or soy milk: 36 g

Preparation:

  1. Preheat the oven to 170 °C. For 10-15 minutes.

  2. Prepare hot water for warming (about 70 ~ 80 °C).

  3. Cover the mold with baking paper.

  4. In a bowl, beat the eggs and add granulated sugar.

  5. Warm the mixture in hot water at around 37 °C while mixing.

  6. After warming, whip the mixture with a hand mixer at high speed until it becomes whitish, then reduce to medium speed.

  7. When the draped dough does not disappear for a while and holds its shape, reduce to low speed to adjust the texture.

  8. Sift in the cake flour and fold lightly with a spatula without overmixing.

  9. Once the mixture is glossy, pour in the warmed vegetable oil and milk or soy milk, mixing lightly.

  10. Pour the batter into the prepared mold and tap it on the counter to remove air bubbles.

  11. Bake in the preheated oven for about 25 minutes or until it springs back when pressed lightly.

  12. Let it cool on a counter top before transferring to a cooling rack.
