Prepare the Pie Crust
Roll the first disc of dough into a 12-inch circle, approximately ⅛ inch thick.

Add Apples to Crust
Pour the mashed apple mixture into the crust, ensuring to squeeze out any excess liquid from the bottom of the bowl.
Prepare the Second Layer
Roll the second cookie sheet into a 12-inch circle, again about ⅛ inch thick.
Place the peel on top of the apple skin.
Finalizing the Dough
Use a sharp knife to cut off the top layer of dough.
Press the top and bottom of the dough into breadcrumbs using fingers.
Lightly brush the top of the dough with egg.
Sprinkle granulated sugar on top.
Baking Preparation
Lightly grease a thin (38-inch) aluminum foil and fold it in half to avoid cake overflow.
Line the top of the cake with parchment paper, labeling it as a “cake protector.”
Cover the sides of the pie with parchment paper to prevent excess heat during baking.
Baking the Pie
Preheat the oven to 400°F.
Place the pie pan on a baking sheet.
Bake the pie at 400°F for 25 minutes.
Return to oven, preheat to 375°F, and bake for an additional 30 to 35 minutes.
Determine Doneness
The pie is done when the surface is golden brown and water begins to run from the edges.
Check that the apples are soft and tender, with similar water running along the edges of the pie.
Serving Suggestions
Enjoy the pie fresh out of the oven, while warm!
Additional Notes
The use of parchment paper and aluminum foil are crucial for ensuring even baking and preventing burning or overflow.
Monitor the pie closely towards the end of the baking time to ensure the best texture and flavor.
