Roasting Methods

Frying Methods
  • Deep Frying: A cooking method in which food items are fully submerged in hot fat. Traditionally performed using lard (pork fat), but modern applications predominantly use cooking oil.

Liquid Medium Cooking Methods

Braising
  • Technique: A combined cooking method that integrates roasting and steaming/stewing.

  • Equipment & Process: Conducted in a pan with a tight-fitting lid or in a casserole dish. The tight lid prevents evaporation, allowing the food to retain its natural juices along with the added flavoring components.

Steaming
  • Direct Steaming: Food is placed directly inside a closed pan surrounded by plenty of steam generated from fast-boiling water, or placed directly inside a dedicated commercial steamer.

  • Indirect Steaming: Food is placed on a covered plate positioned over a saucepan containing boiling water.

Boiling
  • Technique: Food is placed in a pan of liquid that must be maintained at a continuous boil throughout the cooking process, indicated by constant active bubbling at the surface.

  • Boiling Temperature: 100C/212F100^\circ\text{C} / 212^\circ\text{F}.

  • Examples: Boiled corn, boiled vegetables, and boiled potatoes.

Poaching
  • Technique: Food is gently cooked in a liquid mixture of water and vinegar.

  • Temperature Range: Maintained strictly below boiling point, approximately at 93C95C93^\circ\text{C} - 95^\circ\text{C}.

  • Chemical Action: Vinegar and salt are added to the cooking liquid to facilitate quicker protein coagulation and prevent the food from disintegrating.
